  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1 cup bell peppers, diced (mix of colors)
  • 1/4 red onion, finely chopped
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • 2 tsp Italian seasoning
  • Salt & pepper to taste

Instructions

  1. Cook the chicken in a skillet over medium heat for 6-8 minutes per side until golden brown and cooked through. Let rest before slicing.
  2. Boil salted water in a pot and cook the pasta according to package directions until al dente. Drain and rinse under cold water.
  3. Chop the vegetables into bite-sized pieces while the chicken rests.
  4. In a small bowl, whisk together olive oil, lemon juice, Italian seasoning, salt, and pepper.
  5. In a large bowl, combine chopped veggies with cooled pasta and sliced chicken. Drizzle with dressing and toss gently until evenly coated.
