  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 2 cans (15 oz each) Great Northern or Cannellini beans, drained
  • 4 cups low-sodium chicken broth
  • 1 can (4 oz) diced green chiles
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 8 oz cream cheese
  • Juice of 1 lime
  • Fresh cilantro for garnish (optional)

Instructions

  1. Dice the onion and mince the garlic.
  2. In a large pot over medium heat, add oil and sear the chicken breasts for 5-7 minutes per side until golden brown. Remove and set aside.
  3. Add onions and garlic to the pot; sauté until translucent (3-4 minutes).
  4. Pour in chicken broth and add seared chicken back along with green chiles, cumin, and chili powder.
  5. Cover and simmer on low for 20 minutes.
  6. Shred cooked chicken with two forks; return to pot along with cream cheese, stirring until melted.
