- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 medium onion, diced
- 2 cans (15 oz each) Great Northern or Cannellini beans, drained
- 4 cups low-sodium chicken broth
- 1 can (4 oz) diced green chiles
- 2 tsp ground cumin
- 2 tsp chili powder
- 8 oz cream cheese
- Juice of 1 lime
- Fresh cilantro for garnish (optional)
Instructions
- Dice the onion and mince the garlic.
- In a large pot over medium heat, add oil and sear the chicken breasts for 5-7 minutes per side until golden brown. Remove and set aside.
- Add onions and garlic to the pot; sauté until translucent (3-4 minutes).
- Pour in chicken broth and add seared chicken back along with green chiles, cumin, and chili powder.
- Cover and simmer on low for 20 minutes.
- Shred cooked chicken with two forks; return to pot along with cream cheese, stirring until melted.
