  • 4 medium zucchini (sliced into thin rounds)
  • 1 lb lean ground beef or turkey
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 2 tsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat. Sauté onions and garlic until fragrant, about 2 minutes. Add ground meat and cook until browned.
  3. Stir in pizza sauce and Italian seasoning; simmer for 5 minutes.
  4. In a greased baking dish, layer half the zucchini, half the meat mixture, and half the cheese. Repeat the layers.
  5. Cover with foil and bake for 30 minutes. Remove foil for the last 10 minutes to brown the top.
  6. Let cool slightly before serving.
