- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cans (15 oz each) white beans, drained
- 1 can (4 oz) mild green chilies
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 4 cups low-sodium chicken broth
- 1 cup sour cream
- ½ cup fresh cilantro, chopped (for garnish)
- Juice of 1 lime
Instructions
- In a large pot over medium heat, add a splash of oil and cook the chicken for about 6-7 minutes per side until golden brown. Remove and set aside.
- In the same pot, sauté diced onions until soft (about 5 minutes). Add minced garlic and cumin; sauté for an additional minute until fragrant.
- Return chicken to the pot along with drained white beans and green chilies. Pour in the chicken broth and stir well.
- Bring to a gentle boil, then reduce heat to low and simmer uncovered for 20-25 minutes.
- Remove chicken, shred it with two forks, then return to the pot along with lime juice and sour cream. Stir until well combined.
- Serve hot in bowls garnished with fresh cilantro.
