  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 3 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Peel and chop the sweet potatoes into chunks. Boil until tender, about 15-20 minutes, then mash until smooth.
  3. For the crust, mix melted butter, granulated sugar, brown sugar, flour, and salt in a bowl until crumbly. Press evenly into the prepared baking dish.
  4. Combine mashed sweet potatoes with eggs, cinnamon, vanilla extract, and mix thoroughly. Pour over the crust.
  5. Bake for 25-30 minutes or until set and golden around the edges. Let cool completely before cutting into bars.
