  • 2 medium sweet potatoes (about 500g), peeled and cubed
  • 1 cup dried red lentils (200g), rinsed
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro or parsley, chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 cup panko breadcrumbs (100g)
  • 3 tbsp olive oil for frying
  • Salt and pepper to taste

Instructions

  1. Cook the sweet potatoes in salted boiling water for 10 minutes; then add red lentils and simmer until tender.
  2. Drain excess water; mash the sweet potatoes and lentils together in a bowl.
  3. Stir in onions, garlic, herbs, spices, salt, pepper, and breadcrumbs until well combined.
  4. Shape mixture into patties about 2-3 inches wide.
  5. Heat olive oil in a skillet over medium heat; fry patties for 4-5 minutes on each side until golden brown.
