Ingredients
- 2 medium sweet potatoes (about 500g), peeled and cubed
- 1 cup dried red lentils (200g), rinsed
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh cilantro or parsley, chopped
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 cup panko breadcrumbs (100g)
- 3 tbsp olive oil for frying
- Salt and pepper to taste
Instructions
- Cook the sweet potatoes in salted boiling water for 10 minutes; then add red lentils and simmer until tender.
- Drain excess water; mash the sweet potatoes and lentils together in a bowl.
- Stir in onions, garlic, herbs, spices, salt, pepper, and breadcrumbs until well combined.
- Shape mixture into patties about 2-3 inches wide.
- Heat olive oil in a skillet over medium heat; fry patties for 4-5 minutes on each side until golden brown.
