  • 1 cup red lentils, rinsed

  • ½ cup fresh cilantro, chopped
  • ½ cup plain breadcrumbs
  • 1 tsp cumin powder
  • Salt and pepper to taste
  • 3 tbsp olive oil (for frying)

Instructions

  1. Cook lentils in a saucepan with 2 cups water until tender, about 15 minutes. Drain excess water.
  2. In a skillet, heat 1 tablespoon olive oil over medium heat; sauté onion and garlic until soft (about 5 minutes).
  3. In a bowl, mash cooked lentils and sweet potatoes together. Stir in sautéed onions, garlic, cilantro, cumin, salt, pepper, and breadcrumbs.
  4. Shape the mixture into patties (about 3 inches wide) and place on a parchment-lined baking sheet.
  5. Heat remaining olive oil in a skillet over medium heat; fry each patty for about 4-5 minutes per side until golden brown.
