- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup sweet corn (fresh or frozen)
- 1 cup bell peppers, chopped (mix of red, green, yellow)
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 2 tbsp taco seasoning
- 2 cups shredded cheese (cheddar and Monterey Jack blend)
- 1 cup sour cream (or Greek yogurt)
- 1 cup crushed tortilla chips
Instructions
- Preheat oven to 375°F (190°C). In a skillet over medium heat, cook the chicken until golden brown and no longer pink, about 6-8 minutes per side.
- Shred the cooked chicken using two forks. In the same skillet, add bell peppers and sauté until softened, about 4 minutes.
- Stir in black beans, corn, diced tomatoes, and taco seasoning; cook until heated through for about 3-5 minutes.
- Mix in half of the shredded cheese until melted.
- In a baking dish, layer half of the crushed tortilla chips at the bottom, followed by half of the chicken mixture and dollops of sour cream.
- Top with remaining tortilla chips and cheese. Bake for 20-25 minutes until bubbly and golden brown.
