  • 8 oz mascarpone cheese
  • 1 cup fresh raspberries
  • 24 savoiardi (ladyfingers)
  • 1 cup brewed coffee or espresso
  • 1/2 cup granulated sugar
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp pure vanilla extract

Instructions

  1. Gather all ingredients and brew about 1 cup of strong coffee; let it cool slightly.
  2. In a mixing bowl, combine mascarpone cheese, sugar, and vanilla extract; beat until smooth (about 2 minutes).
  3. Gently wash raspberries, reserving some whole for decoration and mashing the rest slightly.
  4. Quickly dip each ladyfinger into cooled coffee and layer them at the bottom of a serving dish to form a base.
  5. Spread half of the mascarpone mixture over ladyfingers followed by half of the mashed raspberries; repeat the layers ending with mascarpone on top.
  6. Dust cocoa powder over the top and add reserved raspberries for garnish. Cover and refrigerate for at least 4 hours or overnight before serving.
