- 24 savoiardi (ladyfingers)
- 1 cup brewed coffee or espresso
- 1/2 cup granulated sugar
- 2 tbsp unsweetened cocoa powder
- 1 tsp pure vanilla extract
Instructions
- Gather all ingredients and brew about 1 cup of strong coffee; let it cool slightly.
- In a mixing bowl, combine mascarpone cheese, sugar, and vanilla extract; beat until smooth (about 2 minutes).
- Gently wash raspberries, reserving some whole for decoration and mashing the rest slightly.
- Quickly dip each ladyfinger into cooled coffee and layer them at the bottom of a serving dish to form a base.
- Spread half of the mascarpone mixture over ladyfingers followed by half of the mashed raspberries; repeat the layers ending with mascarpone on top.
- Dust cocoa powder over the top and add reserved raspberries for garnish. Cover and refrigerate for at least 4 hours or overnight before serving.
