  • 6 strips thick-cut bacon, chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1/4 cup fresh thyme leaves (or 1 tbsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook chopped bacon until crispy. Remove and set aside, keeping drippings in the pot.
  2. Add onions to the pot and sauté until translucent. Stir in minced garlic and cook for about 30 seconds.
  3. Add diced potatoes and chicken broth; bring to a boil. Lower heat and simmer until potatoes are fork-tender (about 15 minutes).
  4. Stir in heavy cream and fresh thyme; simmer for another 5–10 minutes.
  5. Return crispy bacon to the pot; season with salt and pepper before serving hot.
