  • 3 large eggs
  • 1 cup coconut milk
  • 1 cup pineapple chunks (drained)
  • 1 cup coconut flakes (sweetened or unsweetened)
  • 2 tsp vanilla extract
  • 1/4 cup powdered sugar (for frosting)
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, baking powder, and sugar.
  3. In another bowl, cream softened butter until fluffy. Add eggs one at a time, mixing well. Stir in coconut milk and vanilla until smooth.
  4. Gradually mix dry ingredients into wet until just combined. Fold in pineapple chunks and coconut flakes.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until golden brown and a toothpick inserted comes out clean.
  6. Allow to cool completely before frosting with cream cheese frosting or dusting with powdered sugar.
