Ingredients

Scale
  • 1 lb lean ground beef
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 3 tbsp Korean gochujang paste (adjust for heat preference)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • For the Glaze:
  • 1/4 cup ketchup
  • 1 tsp sesame oil
  • 2 green onions, chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a loaf pan with parchment paper or cooking spray.
  2. Sauté chopped onion in a skillet until translucent, about 5 minutes.
  3. In a bowl, combine ground beef, breadcrumbs, eggs, sautéed onions, garlic, gochujang paste, soy sauce, and brown sugar. Mix gently without overworking.
  4. Shape the mixture into a loaf in the prepared pan.
  5. For the glaze, mix ketchup and sesame oil (add more gochujang if desired) and spread it over the meatloaf.
  6. Bake for 50-60 minutes until internal temperature reaches 160°F (70°C). Let rest for 10 minutes before slicing.
