  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/4 cup finely chopped green onions
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1/4 cup ketchup
  • 2 tbsp gochujang
  • 1 tbsp sesame oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a loaf pan with parchment paper or grease it lightly.
  2. In a mixing bowl, combine ground beef, breadcrumbs, eggs, green onions, garlic, soy sauce, ketchup, sesame oil, and gochujang until well mixed.
  3. Shape the mixture into a loaf and place it in the prepared pan.
  4. In a small bowl, whisk together additional gochujang, ketchup, and soy sauce; spread half over the meatloaf.
  5. Bake for 45-55 minutes until the internal temperature reaches 160°F (70°C).
  6. Brush remaining glaze over the top and let rest for 10 minutes before slicing.
