  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth, leaving some chunks for texture.
  3. Stir in melted butter, then add sugar, eggs, and vanilla extract; mix until blended.
  4. Gradually sift in flour, baking soda, salt, and cinnamon; fold gently to combine without overmixing.
  5. Pour half the batter into the prepared pan, sprinkle half the cinnamon-sugar mixture on top, then layer with the remaining batter and finish with the leftover sugar mixture.
  6. Bake for 60-65 minutes or until golden brown; a toothpick should come out clean from the center.
  7. Allow to cool before slicing.
