  • 4 boneless, skinless chicken breasts
  • 1 cup seasoned breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh mozzarella cheese, shredded
  • 2 cups marinara sauce
  • Fresh basil for garnish
  • 2 eggs, beaten
  • 1 cup flour
  • 2 tsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pound chicken breasts to about 1 inch thick for even cooking.
  3. Set up a breading station with flour seasoned with salt and pepper in one bowl, beaten eggs in another, and a mixture of breadcrumbs and Parmesan in the third.
  4. Dredge each chicken breast in flour, dip in egg, then coat in breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat and sear each chicken breast until golden brown (about 3-4 minutes per side).
  6. Place browned chicken in a baking dish, spoon marinara sauce on top, and sprinkle with mozzarella.
