  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 medium sweet potatoes (approx. 2 cups, cubed)
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 cup fresh bell peppers (sliced)
  • 1 medium red onion (sliced)
  • 3 garlic cloves (minced)
  • 2 tbsp lime juice

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, combine sweet potatoes, bell peppers, red onion, olive oil, and half of the Cajun seasoning. Toss until coated.
  3. Spread veggies on a parchment-lined baking sheet and roast for 25-30 minutes until tender.
  4. While veggies roast, heat a skillet over medium-high heat with olive oil. Season chicken with remaining Cajun seasoning and sear for 5-7 minutes on each side until cooked through (internal temperature should reach 165°F).
  5. Slice the chicken and layer it over the roasted veggies. Drizzle with lime juice before serving.
