  • 2 cups butternut squash, peeled and cubed
  • 8 oz Italian sausage (sweet or spicy)
  • 4 cups fresh spinach
  • 8 oz fusilli pasta
  • 2 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Toss butternut squash cubes with olive oil, salt, and roast for 30-35 minutes until tender.
  2. In a large skillet, heat olive oil over medium heat. Sauté onion until translucent (about 5 minutes). Add crumbled sausage; cook until browned.
  3. Stir in minced garlic and spinach; cook until spinach wilts (about 2-3 minutes).
  4. Cook fusilli according to package instructions; reserve some pasta water before draining.
  5. Blend roasted squash until smooth. Combine with the sausage mixture on low heat, then mix in cooked pasta. Adjust consistency with reserved pasta water if needed.
  6. Serve topped with grated Parmesan cheese.
