  • 1 medium butternut squash (about 2 cups cubed)
  • 8 oz fettuccine pasta (or any preferred shape)
  • 1 lb Italian sausage (spicy or sweet)
  • 1 medium yellow onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • 2 cups fresh spinach (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Cube the butternut squash and toss it with olive oil, salt, and pepper.
  2. Spread the squash on a baking sheet and roast for 25-30 minutes until golden and tender, stirring halfway.
  3. While the squash roasts, bring salted water to boil in a large pot. Cook the pasta according to package instructions until al dente. Reserve some pasta water before draining.
  4. In a large skillet over medium heat, sauté chopped onions in olive oil until translucent. Add minced garlic and sliced sausage; cook until browned.
  5. Stir in roasted butternut squash along with drained pasta, tossing gently while adding reserved pasta water as needed for creaminess.
  6. Fold in fresh spinach if using until wilted. Remove from heat and sprinkle with Parmesan cheese before serving.
