  • 4 large fresh artichokes
  • 1 cup freshly grated Parmesan cheese
  • 4 garlic cloves, minced
  • 1 cup Italian-seasoned breadcrumbs
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Rinse the artichokes and trim the top quarter.
  2. Remove tough outer leaves until tender leaves are exposed.
  3. In a bowl, combine breadcrumbs, Parmesan, garlic, olive oil, salt, pepper, and lemon juice until it resembles damp sand.
  4. Generously stuff the mixture between each layer of leaves. Drizzle with olive oil.
  5. Place stuffed artichokes upright in a baking dish with about an inch of water. Cover with foil and bake for 30 minutes.
  6. Uncover and bake for an additional 15-20 minutes until golden brown.
