- 1 cup heavy cream (cold)
- 1/2 cup brewed coffee or espresso (strong)
- 2 tbsp coffee liqueur (optional)
- Additional cocoa powder for dusting
Instructions
- Preheat oven to 375°F (190°C). Grease a jelly roll pan and line it with parchment paper.
- In a mixing bowl, whisk together eggs and sugar until pale and fluffy. Gradually fold in flour and cocoa powder until just combined.
- Pour batter into the prepared pan and smooth out evenly. Bake for 12-15 minutes or until it springs back when pressed.
- Invert the baked cake onto a cocoa-dusted kitchen towel, remove parchment paper, and roll up using the towel as support. Let it cool completely.
- In a separate bowl, whip heavy cream until soft peaks form. Gently fold in mascarpone cheese, brewed coffee, sugar, and optional liqueur.
- Unroll the cooled cake and spread an even layer of filling on top. Roll it back up without the towel, seam side down on a platter.
