  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • 16 oz full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 tbsp lemon juice
  • 1 cup heavy cream
  • 1 cup fresh raspberries (or thawed frozen)
  • ½ cup chopped unsalted pistachios

Instructions

  1. Preheat oven to 350°F (175°C). Mix crushed graham crackers with melted butter and press into the bottom of a springform pan.
  2. Bake crust for about 10 minutes until golden brown; allow to cool.
  3. Beat cream cheese until smooth. Gradually add sugar and vanilla until combined.
  4. Mix in lemon juice and heavy cream on low speed until just combined.
  5. Gently fold in raspberries and pistachios.
  6. Pour filling over cooled crust and bake for about 50 minutes, until slightly jiggly in the center.
  7. Cool completely before refrigerating overnight.
