  • 1.5 lbs beef chuck roast
  • 1 cup elbow macaroni
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth (low-sodium)
  • 1 can (14 oz) diced tomatoes
  • 2 medium carrots, sliced
  • 3 stalks celery, chopped
  • 2 bay leaves
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until translucent (about 5 minutes).
  2. Add beef chuck roast; brown on all sides (approximately 8 minutes).
  3. Stir in carrots, celery, canned tomatoes, and beef broth. Scrape any browned bits from the bottom of the pot.
  4. Add elbow macaroni, bay leaves, and Italian seasoning. Bring to a boil then reduce heat to simmer for about 30 minutes.
  5. Taste and adjust seasoning with salt and pepper as needed. Remove bay leaves before serving.
