- 1 cup elbow macaroni

- 3 stalks celery, chopped
- 2 bay leaves
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions and garlic until translucent (about 5 minutes).
- Add beef chuck roast; brown on all sides (approximately 8 minutes).
- Stir in carrots, celery, canned tomatoes, and beef broth. Scrape any browned bits from the bottom of the pot.
- Add elbow macaroni, bay leaves, and Italian seasoning. Bring to a boil then reduce heat to simmer for about 30 minutes.
- Taste and adjust seasoning with salt and pepper as needed. Remove bay leaves before serving.
