  • 3 cloves fresh garlic, minced
  • 2 tbsp Cajun seasoning
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream (or half-and-half)
  • 1 cup freshly grated Parmesan cheese
  • 1 cup bell peppers, diced
  • 1 cup onions, diced
  • 2 tbsp olive oil
  • 1 cup low-sodium chicken broth
  • 1 tbsp lemon juice

Instructions

  1. Prep your ingredients by chopping bell peppers and onions.
  2. Heat olive oil in a large skillet over medium-high heat. Sear seasoned chicken breasts for about 6-7 minutes per side until golden brown. Remove and set aside.
  3. Add diced bell peppers and onions to the skillet; sauté for about 5 minutes until softened.
  4. Cook pasta according to package instructions until al dente; drain and set aside.
  5. Lower heat and stir in heavy cream and chicken broth into the skillet, scraping any flavorful bits from the bottom.
  6. Add cooked pasta and Parmesan cheese into the sauce mixture, stirring gently until well combined. Adjust consistency with reserved pasta water if needed.
