  • 2 tbsp chopped fresh parsley (for garnish)
  • 2 tbsp low-sodium soy sauce
  • 1/4 cup pine nuts (optional)

Instructions

  2. Heat olive oil in a skillet over medium heat. Sear each chicken breast until golden brown on both sides (about 3-4 minutes per side).
  3. Transfer the seared chicken to the crockpot. Add minced garlic, lemon juice, capers, soy sauce, and chicken broth.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Before serving, sprinkle chopped parsley over the top. Toast pine nuts in a dry skillet until golden and add as a topping if desired.
