  • 8 oz penne pasta
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups freshly shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Dice the chicken into bite-sized pieces. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Sauté minced garlic until fragrant, then add chicken pieces and cook until golden brown and cooked through (about 5-7 minutes).
  3. Pour in the canned diced tomatoes and let simmer for about 10 minutes to meld flavors.
