  • 2 lbs flank steak
  • 1/2 cup fresh lime juice
  • 6 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 medium yellow onions, sliced
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the Flank Steak: In a bowl, combine lime juice, minced garlic, cumin, salt, and pepper. Add the flank steak and coat thoroughly. Cover and refrigerate for at least 2 hours or overnight.
  2. Sear the Meat: Heat olive oil in a large skillet over medium-high heat. Remove the steak from the marinade (reserve marinade) and sear on both sides for about 4-5 minutes each until browned.
  3. Create Caramelized Onions: In the same skillet, add sliced onions to the drippings. Cook on medium heat until golden brown (10-12 minutes), stirring occasionally.
  4. Shred the Steak: Once cooled slightly, shred the steak into bite-sized pieces using two forks.
  5. Add Flavor Back In: Return shredded beef to the skillet with onions and pour reserved marinade over it. Cook together on medium heat for an additional 5 minutes until heated through.
  6. Finish & Serve: Serve hot over rice or tortillas topped with fresh cilantro or avocado slices.
