  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp fresh ginger, minced
  • 4 garlic cloves, minced
  • 2 stalks fresh lemongrass, chopped (or 2 tsp lemongrass paste)
  • 4 cups low-sodium vegetable broth
  • 8 oz sliced mushrooms (button or shiitake)
  • Juice of 1 fresh lime
  • ½ cup fresh cilantro leaves, chopped

Instructions

  1. Prepare the ingredients by chopping chicken into bite-sized pieces and mincing garlic and ginger.
  2. In a large pot over medium heat, add a splash of oil and sauté garlic and ginger for about 1-2 minutes until fragrant.
  3. Add chicken pieces and cook until they turn white on all sides.
  4. Pour in coconut milk and vegetable broth; stir gently to combine.
  5. Add sliced mushrooms and lemongrass; simmer on low heat for about 15 minutes.
  6. Before serving, squeeze lime juice into the soup and garnish with chopped cilantro.
