  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 2 green onions, finely chopped
  • Salt and pepper to taste
  • ¼ cup low-sodium soy sauce
  • ¼ cup rice vinegar (unseasoned)
  • ¼ cup ketchup
  • 2 tbsp granulated sugar
  • 1 tsp garlic powder
  • 1 tbsp cornstarch mixed with water

Instructions

  1. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  3. Dip each piece of chicken in flour, then egg, and coat thoroughly with panko.
  4. Heat oil in a skillet to about 350°F (175°C).
  5. Fry chicken balls in batches for about 5-7 minutes until golden brown and cooked through.
  6. For the sauce, combine soy sauce, rice vinegar, ketchup, sugar, garlic powder, and cornstarch mixture in a saucepan over medium heat; stir until thickened (about 3 minutes).
