- 4 cups low-sodium vegetable broth
- 2 tsp ground cumin
- 2 tsp ground coriander
- 3 cups fresh spinach or kale
- Juice of 1 lemon
- 1 tbsp olive oil
Instructions
- Prep the vegetables by chopping them into bite-sized pieces.

- About 30 minutes before serving, stir in spinach or kale and lemon juice.
