Ingredients

  • 2 cans (15 oz each) low-sodium chickpeas, drained and rinsed
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 bell pepper, chopped (any color)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 3 cups fresh spinach or kale
  • Juice of 1 lemon
  • 1 tbsp olive oil

Instructions

  1. Prep the vegetables by chopping them into bite-sized pieces.
  2. Sauté onions and garlic in olive oil over medium heat until translucent (about 3 minutes).
  3. Transfer the sautéed mix to the crockpot along with chickpeas, carrots, celery, bell pepper, spices, and broth. Stir well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until everything is tender.
  5. About 30 minutes before serving, stir in spinach or kale and lemon juice.
  6. Serve hot with crusty bread or over rice.
