Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz spaghetti (regular or whole wheat)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (14.5 oz) diced tomatoes (no-salt-added)
  • 1 medium onion, chopped
  • 1 bell pepper, chopped (any color)
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 cup water
  • Parmesan cheese for topping

Instructions

  1. Chop the onion and bell pepper into bite-sized pieces.
  2. Layer the chicken in the bottom of a crockpot. Add cream of mushroom soup, diced tomatoes, veggies, Italian seasoning, garlic powder, and water.
  3. Stir gently to combine without disturbing the chicken too much.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, add uncooked spaghetti to the pot and stir gently until submerged.
  6. Serve topped with freshly grated Parmesan cheese.
