  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1-inch piece ginger root, peeled and minced
  • 1/4 cup low-sodium soy sauce
  • 6 cups low-sodium chicken broth
  • 2 packs (6 oz each) instant ramen noodles
  • 1 cup sliced green onions (both green and white parts)
  • 1 cup chopped carrots
  • 1 cup chopped bell peppers

Instructions

  1. Prepare the ingredients by chopping the vegetables and dicing the garlic and ginger.
  2. Place the chicken breasts at the bottom of the crockpot. Add minced garlic, ginger, soy sauce, and chicken broth over the chicken.
  3. Layer in the chopped vegetables for added color and nutrition.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
  5. About 15 minutes before serving, stir in the ramen noodles until softened.
  6. Serve hot in bowls, garnished with sliced green onions.
