  • 2 stalks celery, finely chopped
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 package (16 oz) store-bought gnocchi
  • 2 cups fresh spinach or kale
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste

Instructions

  1. Chop chicken breasts into bite-sized pieces and prepare all vegetables.
  2. In a large pot, heat olive oil over medium heat. Sauté onions and garlic until translucent.
