- 1 red bell pepper, diced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 2 tsp ground cumin
- 2 tsp chili powder (adjust to taste)
- Juice of 1 lime
Instructions
- Prep your ingredients by washing and peeling the sweet potatoes; chop them into bite-sized cubes. Dice the onion and bell pepper while mincing the garlic.
- In a large pot over medium heat, sauté the onions until translucent, about 5 minutes. Add minced garlic and cook for another minute.
- Add cubed sweet potatoes and diced bell pepper; stir and cook for another 5 minutes.
- Sprinkle cumin and chili powder over the vegetables; stir well. Pour in vegetable broth and add black beans.
- Bring the mixture to a boil, then reduce heat and simmer for 25-30 minutes until sweet potatoes are tender.
