Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper (any color), diced
  • ¼ red onion, finely chopped
  • ¼ cup fresh parsley or cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. Combine with water in a saucepan and bring to a boil. Reduce heat and simmer covered for 15 minutes until fluffy.
  2. While quinoa cooks, chop cherry tomatoes, cucumber, bell pepper, and red onion.
  3. Once quinoa is cool, fluff with a fork and mix with chopped vegetables in a large bowl.
  4. In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour over the salad mixture and toss gently to coat.
  5. Serve immediately or chill for at least 30 minutes for enhanced flavor.
